    Kimmeridge clay- limestone subsoil of the Jurassic Secondary

Vinification:

  • 80% in tanks, 20 % oak barrel (new at 4 years)
  • Alcoholic fermentation by selected yeast, under temperature control
  • Controlled malolactic fermentation
  • 80% of maturing in vats, 20% in oak barrel
  • Cold treatment for tartaric precipitation

Service:

  • Ideal serving temperature 14 °c.
  • Wine for ageing ideal with cooked fish with sauce, cooked crawfish and lobster, white meat, spicy sauce and blue-veined cheese...

Vintage 2004

" Clear, brilliant dress and limpid gold with the gilded and green reflections. Nose evolving with the citrus fruits and grilled almond notes. Powerful mouth, lives, fatty with the well coated acidity which croûtonne matter. Very pleasant, fresh and tasty finale. Long persisitance aromatic. A vinified vintage 80 % out of tank, 20 % out of barrels of oak (new with 3 wines). The vine located in slopes, bordering the South of the Grands Crus of Chablis Vintages exposed. Chardonnay still a little young. Very beautiful potential of guard. To follow."

"The 1er Cru Chablis Mountain of Environment arises from the chardonnay vine, as all the wines of the domain, vineyards of which benefit from an exposure full south. Dress of light yellow one brilliant. Nose engaging, in the floral accents, notes of roasted almond, citrus fruits. Mouth corpulent, powerful, of which one appreciates the sharp structure which brings freshness to the unit. Pretty wine still quite young. Potential beautiful."
