Production:

  • Grape Variety : Chardonnay called "Beaunois"
  • Geographic position : Hill- side "Montée de Tonnerre"
    Near the South of Chablis Grands Crus
    Kimmeridge clay- limestone subsoil of the Jurassic Secondary
  • Surface in production : 2 ha 13

Vinification:

  • 80% in tanks, 20 % oak barrel (new at 4 years)
  • Alcoholic fermentation by selected yeast, under
  • temperature control
  • Controlled malolactic fermentation
  • 80% of maturing in vats, 20% in oak barrel
  • Cold treatment for tartaric precipitation

Service:

  • Ideal serving temperature 14 °c
  • Wine for ageing ideal with cooked fish with sauce, cooked crawfish and lobster, white meat, and cheese...

Vintage 2005

 

"Very beautiful pale, almost crystalline yellow dress. Complex nose presenting of the flavours of flowers and fruits of intense mineral notes. Constructed mouth developing with elegance on nuances of ripe fruits. Vine planted in slopes bordering the South of the great vintages.   Chardonnay vinified to some extent ferments of them 80 %, 20 % out of barrels of Oak (new and 4 wines). A very rich Chablis resulting from a basement Kimméridgien argilo-limestone of the Jurassic Secondary, should not be been useful too fresh (14°). A wine to be appreciated fully in 2 to 3 years."
