It is in spring that we can best understand the specificities of Chablis vineyard. Indeed, the main fear of the Chablis vine grower is the spring frost.

The history shows us that the recent development of the vineyard is directly link to frost.

Each restarting of the vineyard was slow down strongly as soon as few years of frost came destroy the harvest potential. It is only when ways of fight against spring frost were found that the vineyard has begun to hope, to produce, to increase.

However, it is only when both consumers became conscious of it and growers understood that they had to take into account the cost of this protection in their selling price that the vineyard have had a real opportunity to bloom.

Investments of protection against frost are huge and expensive. But it is only by protecting harvest that we can invest and consequently expect to produce for the pleasure of everybody this white high- class characteristic wine, the Chablis.
