| Just as the vineyards of Chablis are a blend of tradition and modern techniques, our vinification is based on an age-old respect for nature’s products – the grapes, the must and the wine – allied with the stringent controls and in-depth skills that the development of oenological techniques offers us. |
Most of our wines are vinified in vats with temperature control, but this is used sparingly – depending on each individual ‘cuvée’. For the Montée de Tonnerre and Mont de Milieu Chablis premiers crus, between 20% and 40% is vinified in new casks (French oak, slow heated), then blended eight months later with the portion of the original cuvée that was vinified in the vat. |

And from the grape harvest up to bottling, all that tradition and all that technique provide the support for what has always been the attraction of the Domain’s wines – taste and the knack and temperament of the wine-maker making his own wine! |
